
A delightful and easy appetizer for the Festive days!
RECIPE – Servings 30
Ingredients
2 (160g/5.6oz) Cans Tuna, drained
1 Small Onion, finely diced
3 Hard Boiled Eggs, finely chopped
3 Tbsp Mayonnaise
2 Tsp Dijon Mustard
2 Tbsp Fresh Chopped Parsley
Freshly Ground Pepper
Paprika
2 Puff Pastry Rectangular Sheets
Sesame Seeds
Green Olives for garnish
Toothpicks
Beaten Egg for egg wash
5cm Round Pastry Cutter
Method:
Round Puffs –
Preheat oven to 200C/400F.
Fold over the pastry sheet so it will be double the thickness and press it together. Cut 15 circles from each sheet and place on a lined baking tray.
Brush the top with beaten egg and sprinkle with sesame seeds. Bake in oven until golden. Remove from oven and leave to cool completely.
Filling –
In a large bowl, add the onions, tuna, eggs, parsley and season with freshly ground pepper to taste. Mix together then stir in the mustard and mayonnaise.
Slice the pastry puffs in half. Fill the bottom half with tuna mixture, sprinkle paprika on top and close. In the centre, insert a toothpick with a green olive for garnish.
