This quick spicy chicken stir-fry delivers tender chicken, crisp peppers, and a glossy, savory sauce—perfect with a mound of hot rice.
Ingredients
1 cup jasmine rice
2 cups water
400 g chicken breast, cubed
Salt & pepper
2 tbsp vegetable oil
1 sliced onion
1 green bell pepper, chopped
1 red bell pepper, sliced
2 garlic cloves, minced
1–2 tsp chili flakes
3 tbsp soy sauce
1 tbsp oyster sauce
1 tsp sugar
100 ml chicken stock
Method
Cook rice until fluffy and set aside.
Sear seasoned chicken in hot oil until lightly browned; remove from pan.
Stir-fry onion, peppers, and garlic until aromatic.
Add chicken back with sauces, sugar, chili flakes, and stock.
Simmer briefly until thick and glossy.
Serve with rice and a sprinkle of chili flakes.
