Ingredients
1 cup pineapple chunks (fresh or canned, drained)
1 cup butter (divided)
1 cup brown sugar
2 cups all-purpose flour
1 teaspoon baking powder
(Optional additions for better texture and flavor: 1 cup milk, 2 eggs, 1 teaspoon vanilla extract)
Preparation Method
Preheat the oven
Preheat your oven to 350°F (180°C). Grease a round cake pan well.
Prepare the topping
Melt ½ cup butter and pour it into the bottom of the cake pan. Sprinkle the brown sugar evenly over the melted butter. Arrange the pineapple chunks evenly on top.
Prepare the cake batter
In a bowl, mix the flour and baking powder.
In another bowl, cream the remaining ½ cup butter until smooth. Gradually add the batter mixture and mix until well combined and smooth.
Assemble the cake
Carefully pour the cake batter over the pineapple layer and spread evenly.
Bake
Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
Cool and flip
