Lentil Comfort Bowl with Rice & Crispy Egg

𝐈𝐧𝐠𝐫𝐞𝐝𝐒𝐞𝐧𝐭𝐬:

1 cup cooked brown lentils

1/2 cup cooked white or brown rice

1 egg (fried sunny-side up)

1/2 avocado, sliced

1/4 cup diced carrots

1/4 cup diced potatoes

1 tbsp olive oil

1 small onion, finely chopped

1 clove garlic, minced

Salt & black pepper to taste

Ground cumin or paprika (optional)

Fresh cilantro or parsley (chopped)

Cook the lentils: In a pan, sautΓ© onion and garlic in olive oil until soft. Add cooked lentils, carrots, potatoes, salt, pepper, and spices. Simmer with a splash of water until thick and saucy.

Prepare the egg: Fry the egg in a hot pan until the edges are crispy and the yolk is still runny.

Assemble the bowl: Spoon rice into a bowl, ladle the lentil stew over half of it.

Finish strong: Add avocado slices and place the fried egg on top. Sprinkle with fresh herbs and cracked black pepper.
