Layered Beet & Potato Gratin with Feta & Walnuts


Ingredients:

Vegetables:
2 cups potatoes, thinly sliced
(300 g)
2 cups beets, peeled and thinly sliced
(300 g)

Cream Sauce:
1 cup heavy cream
(240 ml)
2 cloves garlic, minced
1 teaspoon salt
(6 g)
1/2 teaspoon black pepper
(2 g)
1/2 teaspoon thyme or rosemary
(1 g)

Topping:
1 cup feta cheese, crumbled
(150 g)
1/3 cup walnuts, chopped
(40 g)

Optional Garnish:
Fresh thyme leaves

Directions:

Preheat oven to 375°F / 190°C and grease a baking dish.

Layer potatoes and beets evenly in the dish.

Whisk cream with garlic, salt, pepper, and herbs; pour over vegetables.

Cover with foil and bake 40 minutes. Uncover, top with feta and walnuts, and bake 15–20 minutes until tender and lightly golden.

Rest 10 minutes before serving. Garnish if desired.
