
Ingredients (12 muffins)
3 medium ripe bananas (mashed)
½ cup (100 g) sugar
⅓ cup (80 ml) vegetable oil or melted butter
1 large egg
1 tsp vanilla extract
1 ½ cups (190 g) all-purpose flour
1 tsp baking soda
1 tsp baking powder
½ tsp cinnamon (optional but delicious)
¼ tsp salt
Instructions
Preheat oven to 180°C (350°F) and line a muffin tray.
Mash the bananas in a bowl.
Add sugar, oil (or melted butter), egg, and vanilla; mix well.
In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
Add dry ingredients to the wet mixture and stir gently—don’t overmix.
Fill muffin cups about ¾ full.
Bake for 18–22 minutes, or until a toothpick comes out clean.
Allow to cool slightly before serving.
