Ingredients
1 (3–4 lb) chuck roast
1 packet ranch dressing mix
1 packet au jus gravy mix
½ cup unsalted butter (1 stick)
5–6 pepperoncini peppers (mild)
¼ cup pepperoncini juice (from the jar)
Salt and black pepper, to taste (optional)
Instructions
Prepare the Roast
Place the chuck roast directly into the crock pot. Season lightly with salt and pepper if desired (optional, as the seasoning packets are already flavorful).
Add Seasonings
Sprinkle the ranch dressing mix and au jus gravy mix evenly over the top of the roast.
Add Butter & Peppers
Place the stick of butter on top of the roast. Add the pepperoncini peppers around the meat and pour in the pepperoncini juice.
Slow Cook
Cover and cook on LOW for 8 hours or HIGH for 4–5 hours, until the meat is extremely tender and easily shreds with a fork.
Shred & Serve
Shred the roast directly in the crock pot and mix it well with the juices for maximum flavor.
Serving Suggestions
Serve Mississippi Roast over mashed potatoes, rice, egg noodles, or creamy grits. It’s also delicious piled onto sandwich rolls or served alongside roasted vegetables.
