How To Prepare Bacon, Egg & Cheese Breakfast Bites

These fluffy, cheesy breakfast bites are perfect for busy mornings. Make a batch ahead and reheat in seconds for a quick keto-friendly breakfast.

Ingredients

8 large eggs

3 tablespoons heavy cream or milk

Salt and black pepper, to taste (go light on salt—bacon is salty)

4 oz shredded cheese (cheddar, Colby Jack, or a blend)

1 small package bacon bits or cooked bacon, chopped

Instructions

Preheat & Prep
Preheat oven to 350°F (175°C).
Lightly grease a muffin pan or brownie bite pan.

Mix the Eggs
In a bowl, whisk together eggs, heavy cream, salt, and pepper until well combined.

Fill the Pan
Pour the egg mixture evenly into the prepared pan.

Add Toppings
Sprinkle shredded cheese evenly over the egg mixture.
Add about 1 teaspoon of bacon bits (or chopped bacon) to each egg bite.

Bake
Bake for 12 minutes, or until set in the center and lightly golden on top.

Cool & Serve
Let cool slightly before removing from the pan.

Reheat: Microwave for 30 seconds to 1 minute.
