Ingredients:
1 cup cottage cheese
4 large eggs
1½ cups fresh spinach, chopped
½ cup shredded cheese (cheddar, mozzarella, or feta)
¼ cup onion, finely chopped (optional)
1 clove garlic, minced (optional)
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon nutmeg (optional)
Cooking spray or olive oil for greasing
Preparation Method:
Preheat the oven to 180°C (350°F). Lightly grease a baking dish or pie pan.
In a large bowl, whisk the eggs until well beaten.
Add the cottage cheese and mix until mostly smooth.
Stir in the chopped spinach, shredded cheese, onion, garlic, salt, pepper, and nutmeg.
Pour the mixture into the prepared baking dish and spread evenly.
Bake for 35–40 minutes, or until the quiche is set in the center and lightly golden on top.
Remove from the oven and let it rest for 5–10 minutes before slicing.
