Ingredients:
12 cooked beef meatballs
12 oz rotini or penne pasta
1 tablespoon olive oil
2 cloves garlic, minced
1 cup heavy cream
1½ cups shredded cheddar cheese
⅓ cup BBQ sauce
2 tablespoons ranch dressing
½ teaspoon smoked paprika
Salt and black pepper, to taste
Fresh parsley or green onions, chopped (for garnish)
Instructions:
Cook the Pasta:
Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
Warm the Meatballs:
Heat olive oil in a large skillet over medium heat. Add the cooked meatballs and warm them for 4–5 minutes until heated through.
Make the BBQ Ranch Sauce:
In a small bowl, mix the BBQ sauce, ranch dressing, and smoked paprika. Pour the mixture over the meatballs and toss gently until evenly coated. Remove from heat and set aside.
Prepare the Cheddar Sauce:
In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Pour in the heavy cream and simmer on low heat for 2–3 minutes. Gradually add the shredded cheddar cheese, stirring constantly until smooth and creamy.
Combine Everything:
Add the cooked pasta to the cheddar sauce and toss until fully coated. Gently fold in the BBQ ranch meatballs.
Season & Serve:
Season with salt and black pepper to taste. Garnish with fresh parsley or green onions and serve hot.
Tip: For extra smokiness, add a pinch of chipotle powder or drizzle with more BBQ sauce before serving.
