Ingredients
1 cup cottage cheese
2 large eggs
1/3 cup honey or maple syrup
1 teaspoon vanilla extract
1 ½ cups finely grated carrots
1 cup oat flour (or blended rolled oats)
1 teaspoon baking powder
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon salt
Optional: ¼ cup chopped walnuts or raisins

Instructions
Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
In a blender or food processor, blend the cottage cheese until smooth and creamy.
Transfer the blended cottage cheese to a bowl and whisk in the eggs, honey (or maple syrup), and vanilla extract until well combined.
Add the grated carrots and mix gently.
In a separate bowl, combine oat flour, baking powder, cinnamon, nutmeg, and salt.
Gradually fold the dry ingredients into the wet mixture until just combined.
Stir in nuts or raisins if using.
Pour the batter into the prepared pan and spread evenly.
Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
Allow to cool completely before slicing into bars.
