12 oz (340 g) beef steak (sirloin or ribeye), cut into thick medallions

6 breakfast sausages

4 large eggs

2 tablespoons olive oil

1 tablespoon butter

2 cloves garlic, minced

Salt & black pepper, to taste

½ teaspoon smoked paprika (optional)

Fresh parsley, finely chopped (for garnish)

Instructions

Heat the Skillet
Heat a cast-iron skillet over medium-high heat. Add olive oil and butter until hot and shimmering.

Cook the Sausages
Add sausages to the skillet and cook for 6–8 minutes, turning until browned and fully cooked. Move them to one side.

Sear the Steak
Season steak medallions generously with salt, pepper, and smoked paprika.
Sear for 2–3 minutes per side (medium-rare) or to your preferred doneness. Add garlic during the last 30 seconds for aroma.

Fry the Eggs
