Tender, juicy meatballs simmered in a silky garlic Parmesan cream sauce—this keto-friendly dish is pure comfort without the carbs.
Ingredients
For the Meatballs
1 lb ground beef (or a beef & pork blend for extra flavor)
¼ cup almond flour
¼ cup grated Parmesan cheese
1 large egg
1 tsp garlic powder
½ tsp onion powder
Salt and black pepper, to taste
For the Creamy Garlic Sauce
2 tbsp butter
3 cloves garlic, minced
1 cup heavy cream
½ cup chicken broth (or beef broth for deeper flavor)
½ cup grated Parmesan cheese
½ tsp Italian seasoning
Optional: pinch of nutmeg or paprika for warmth
Instructions
- Make the Meatballs
In a large bowl, combine all meatball ingredients until just mixed.
Roll into 1-inch meatballs.
Heat a skillet over medium heat with a little butter or olive oil.
Brown meatballs on all sides until golden (they don’t need to be fully cooked yet).
Remove and set aside.
- Prepare the Cream Sauce
In the same skillet, melt butter and sauté garlic for about 30 seconds until fragrant.
Pour in broth and heavy cream, stirring to combine.
Add Parmesan cheese and Italian seasoning.
Simmer gently until the sauce thickens slightly.
- Simmer Together
Return meatballs to the skillet, spooning sauce over them.
Cover and simmer for 10–15 minutes, until meatballs are fully cooked and tender.
Stir occasionally to keep everything well coated.
- Serve
Garnish with fresh parsley or extra Parmesan if desired.
Serve hot.
