Keto Cheesy Beef & Broccoli Casserole

This rich, cheesy casserole combines seasoned ground beef, tender broccoli, and a creamy cheese sauce for a cozy keto dinner that’s perfect for meal prep or weeknights.

1 lb ground beef (or ground turkey)

2 cups broccoli florets, chopped (fresh or frozen)

1 cup shredded cheddar cheese

½ cup shredded mozzarella cheese

½ small onion, diced

2 cloves garlic, minced

1 tbsp butter or olive oil

Salt and black pepper, to taste

Creamy Sauce

¾ cup heavy cream

2 tbsp cream cheese

½ tsp paprika

½ tsp garlic powder

Optional: pinch of crushed red pepper flakes or mustard powder

Instructions

  1. Preheat the Oven

Preheat to 375°F (190°C).

Lightly grease a baking dish.

  1. Cook the Beef

Heat butter or oil in a skillet over medium heat.

Sauté the diced onion until soft.

Add garlic and cook for 30–60 seconds.

Add ground beef and cook until browned.

Season with salt, pepper, paprika, and garlic powder.

Drain excess grease if needed.

  1. Prepare the Broccoli

Steam or microwave broccoli for 2–3 minutes until just tender.

Drain well and pat dry to remove excess moisture.

  1. Make the Creamy Sauce

In a small saucepan, gently heat heavy cream and cream cheese.

Whisk until smooth and creamy.

Season lightly with salt, pepper, and optional mustard powder.

  1. Assemble the Casserole

In a large bowl, combine cooked beef, broccoli, and creamy sauce.

Spread evenly into the prepared baking dish.

Sprinkle cheddar and mozzarella over the top.

  1. Bake

Bake uncovered for 20–25 minutes, until the cheese is bubbly and golden.

Let cool for 5 minutes before serving to help it set.
