Golden Lemon Dijon Chicken Thighs with Slow-Caramelized Onions

Juicy, crispy-skinned chicken thighs are coated in a zesty Dijon-lemon marinade, then roasted alongside slow-caramelized onions that melt into a sweet, golden base. Ingredients

6 bone-in, skin-on chicken thighs

2 tablespoons olive oil

2 large yellow onions, thinly sliced

3 cloves garlic, minced

3 tablespoons Dijon mustard

Zest of 1 lemon

¼ cup fresh lemon juice

1 teaspoon dried thyme

1 teaspoon dried oregano

½ teaspoon paprika

Salt and freshly ground black pepper, to taste

Preparation Method

Caramelize the Onions
Heat 1 tablespoon of olive oil in a large skillet over medium-low heat. Add the sliced onions and a pinch of salt. Cook slowly, stirring occasionally, for 20–25 minutes until soft, golden, and caramelized. Add the minced garlic during the last 2 minutes, then remove from heat.

Prepare the Lemon Dijon Marinade
In a bowl, mix the Dijon mustard, lemon zest, lemon juice, thyme, oregano, paprika, remaining olive oil, salt, and black pepper until well combined.

Season the Chicken
Pat the chicken thighs dry with paper towels. Rub the Dijon-lemon mixture generously over the chicken, making sure to coat both the skin and underside.

Assemble the Dish
Preheat the oven to 400°F (200°C). Spread the caramelized onions evenly in a baking dish or oven-safe skillet. Place the chicken thighs skin-side up on top of the onions.

Roast to Perfection
Roast uncovered for 40–45 minutes, or until the chicken skin is golden and crispy and the internal temperature reaches 165°F (74°C). For extra crispiness, broil for the last 2–3 minutes if desired.
