Easy Christmas Roast Beef (Foolproof & Juicy)
Serves: 6–8
Prep Time: 15 minutes
Cook Time: 60–75 minutes
Rest Time: 20 minutes
Ingredients
For the Roast Beef
3–4 lb (1.5–2 kg) beef rib roast or sirloin roast
2 tbsp olive oil
4 cloves garlic, minced
2 tbsp fresh rosemary, finely chopped
1 tbsp fresh thyme, finely chopped
1 tsp salt (or to taste)
1 tsp black pepper
1 tsp Dijon mustard (optional, for extra depth)
For the Gravy
Pan drippings from the roast
2 tbsp butter
2 tbsp all-purpose flour
2 cups beef stock (warm)
Salt and black pepper, to taste
Instructions – Step by Step
1️⃣ Bring the Beef to Room Temperature
Remove the beef from the refrigerator at least 1 hour before cooking. This ensures even cooking and a juicy center.
2️⃣ Prepare the Herb Crust
In a small bowl, mix:
Olive oil
Garlic
Rosemary
Thyme
Salt & pepper
Dijon mustard (if using)
Rub this mixture generously all over the beef.
3️⃣ Sear for Maximum Flavor
Preheat oven to 425°F (220°C).
Heat a heavy skillet or roasting pan over high heat. Sear the beef on all sides (about 2–3 minutes per side) until beautifully browned.
4️⃣ Roast to Perfection
Transfer the beef to the oven and roast:
Medium-rare: Remove at 125–130°F (52–54°C)
Medium: Remove at 135°F (57°C)
This usually takes 15–18 minutes per pound, but always trust the thermometer.
5️⃣ Rest (Do NOT Skip This!)
Remove the roast, loosely tent with foil, and let it rest 20 minutes.
The temperature will rise and juices will redistribute.
6️⃣ Make the Gravy (Liquid Gold )
Place the roasting pan on the stovetop over medium heat.
Add butter and melt
Whisk in flour and cook 1 minute
Slowly add warm beef stock, whisking constantly
Simmer until thick and glossy
Season to taste
