For the Beef Patties:

2 beef patties (80/20 or lean ground beef)

Salt & cracked black pepper

1 tsp olive oil

For the Salad:

Β½ cup cucumber, chopped

Β½ cup cherry tomatoes, halved

ΒΌ cup green olives

ΒΌ cup diced green bell pepper or sliced green chili

1–2 tbsp feta cheese cubes

1 tsp olive oil

Salt & black pepper to taste

Cook the Patties: Season beef patties generously with salt and black pepper. Heat olive oil in a skillet over medium-high heat and cook patties 3–4 minutes per side until browned and cooked through. Let rest.

Make the Salad: In a bowl, combine cucumber, tomatoes, olives, green pepper/chili, and feta. Drizzle with olive oil, season with salt & pepper, and toss gently.
