- 1 cup butter, softened and at room temperature
- 1 ½ cups light brown sugar, packed
- 3 large eggs, at room temperature
- 1 tablespoon vanilla extract
- 1 pinch salt
- 1 cup all-purpose flour
- 1 cup mixed peel
- 1 cup candied cherries (red and green), quartered or chopped
- 1 cup candied pineapple, chopped
- 1 cup dried dates, pitted and chopped
Directions:
- Preheat your oven to 350°F (175°C). Grease a baking pan or line it with parchment paper.
- In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
- Beat in the eggs one at a time, mixing well after each addition. Then add the vanilla extract and a pinch of salt.
- Gradually mix in the flour until just combined.
- Fold in the mixed peel, candied cherries, candied pineapple, and chopped dates until evenly distributed.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the fruitcake bars to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
