Ingredients

2 cups cooked chicken, shredded or diced

1 cup uncooked long-grain rice

2 cups chicken broth

1 can (300 g / 10.5 oz) cream of chicken soup

1 cup milk or heavy cream

1 small onion, finely chopped

2 cloves garlic, minced

1 cup shredded cheddar cheese (optional but recommended)

1 cup frozen mixed vegetables (peas, carrots, corn – optional)

2 tablespoons butter

Salt and black pepper, to taste

½ teaspoon paprika or dried thyme (optional)

Fresh parsley, for garnish

Instructions

Preheat the oven to 180°C (350°F). Lightly grease a medium baking dish.

In a large bowl, combine the uncooked rice, chicken broth, cream of chicken soup, and milk. Stir until smooth.

Add the cooked chicken, chopped onion, garlic, butter, vegetables, salt, pepper, and paprika. Mix well.

Pour the mixture into the prepared baking dish and spread evenly.

Cover tightly with foil and bake for 45 minutes.

Remove the foil, sprinkle shredded cheese over the top, and return to the oven uncovered.

Bake for an additional 15–20 minutes, until the rice is tender and the top is golden and bubbly.

Let the casserole rest for 5–10 minutes before serving. Garnish with fresh parsley if desired.
