Ingredients
Peanut Butter Filling:
1 cup creamy peanut butter
¼ cup unsalted butter, softened
2 cups powdered sugar
1 teaspoon vanilla extract
Chocolate Coating:
2½ cups milk chocolate chips (or semi-sweet, if preferred)
1 tablespoon vegetable shortening or coconut oil (for smooth melting)
Instructions
- Prepare the filling
In a large bowl, mix the peanut butter, softened butter, and vanilla until smooth.
Gradually add the powdered sugar and mix until a soft, moldable dough forms. - Shape the patties
Roll the mixture into small balls, then gently flatten into round patties.
Place them on a baking sheet lined with parchment paper. - Chill
Refrigerate for 30–45 minutes, until firm. - Melt the chocolate
In a microwave-safe bowl, melt the chocolate chips with the shortening in 30-second intervals, stirring each time until smooth. - Dip & coat
Dip each chilled patty into the melted chocolate, coating completely.
Let excess chocolate drip off, then return to the parchment paper. - Set
