Ingredients

300 g feta or mozzarella cheese, cut into bite-sized cubes

1/2 cup extra-virgin olive oil

1/3 cup green olives, halved

1/3 cup roasted red peppers, diced

1 clove garlic, finely minced (optional)

1 tsp dried oregano or Italian herbs

1/2 tsp dried thyme or rosemary

Freshly ground black pepper, to taste

Chili flakes (optional, for heat)

Fresh herbs (parsley or basil), for garnish

Preparation Method

  1. Place the cheese cubes in a clean bowl or glass jar.
  2. Add the halved olives and diced roasted red peppers.
  3. Sprinkle in the dried herbs, black pepper, and chili flakes if using.
  4. Add the minced garlic (optional).
  5. Pour the olive oil over the mixture, making sure everything is well coated.
  6. Gently toss or stir to combine without breaking the cheese.
  7. Cover and refrigerate for at least 1–2 hours (overnight for best flavor).
  8. Before serving, let it sit at room temperature for 10 minutes and garnish with fresh herbs.
