A cheesy, satisfying breakfast pizza made with a fathead crust and loaded with eggs, sausage, and melty cheese.
Ingredients
Crust (Fathead Dough)
1½ cups shredded mozzarella cheese
2 tablespoons cream cheese
1 large egg
¾ cup almond flour
½ teaspoon baking powder
½ teaspoon garlic powder (optional)
Toppings
½ lb breakfast sausage, cooked and crumbled
4 large eggs
2 tablespoons heavy cream (for fluffier eggs)
1½ cups shredded cheddar–mozzarella blend
Salt and black pepper, to taste
Instructions
- Make the Crust
Preheat oven to 400°F (200°C).
In a microwave-safe bowl, melt mozzarella and cream cheese for 90 seconds, stirring halfway, until smooth.
Mix in almond flour, egg, baking powder, and garlic powder until a dough forms.
Press dough onto parchment paper into a circle or rectangle.
Bake for 8–10 minutes, until lightly golden.
- Prepare the Toppings
Cook breakfast sausage in a skillet until browned; set aside.
Whisk eggs with heavy cream, salt, and pepper.
Scramble gently until just set (they’ll finish cooking in the oven).
- Assemble the Pizza
Spread scrambled eggs evenly over the baked crust.
Sprinkle sausage crumbles on top.
Finish with shredded cheese.
- Bake
Return pizza to oven and bake for 6–8 minutes, until cheese is melted and bubbly.
- Serve
Let cool slightly, slice, and enjoy warm.
