
Ingredients:
2 cups frozen shredded hash browns, thawed
1/2 pound breakfast sausage, cooked and crumbled
1 cup shredded cheddar cheese
3 large eggs
1/4 cup chopped green onions
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
Cooking spray or oil for greasing
Directions:
Preheat your oven to 375°F (190°C). Lightly grease a mini muffin tin with cooking spray or oil.
In a large bowl, mix together the thawed hash browns, cooked sausage, cheddar cheese, eggs, green onions, garlic powder, onion powder, salt, and pepper until well combined.
Spoon the mixture into the prepared mini muffin tin, filling each cup about 3/4 full and pressing gently to compact.
Bake in the preheated oven for 20-25 minutes, or until the bites are golden brown and crispy on the edges.
Let cool for a few minutes before removing from the tin. Serve warm and enjoy!
