
Ingredients:
2 slices of sourdough bread
1 cup shredded cooked chicken
1/2 cup buffalo sauce
1 cup shredded cheddar cheese
1/2 cup blue cheese crumbles
2 tablespoons butter
Directions:
- In a medium bowl, combine the shredded cooked chicken with the buffalo sauce. Mix well until the chicken is evenly coated. Set aside.
- Heat a skillet over medium heat. While the skillet is warming, butter one side of each slice of sourdough bread. Make sure to spread the butter evenly for a nice golden crust.
- Place one slice of bread, buttered side down, onto the skillet. Layer half of the shredded cheddar cheese on top of the bread.
- Spoon the buffalo chicken mixture over the cheddar cheese, spreading it out evenly.
- Sprinkle the blue cheese crumbles over the buffalo chicken, followed by the remaining shredded cheddar cheese.
- Top with the second slice of sourdough bread, buttered side up.
- Cook the sandwich for about 3-4 minutes, or until the bottom slice is golden brown and crispy. Carefully flip the sandwich using a spatula.
- Cook the other side for an additional 3-4 minutes, or until it is also golden brown and the cheese has melted.
- Once cooked, remove the sandwich from the skillet and let it rest for a minute before slicing it in half.
- Serve the sandwich warm, and enjoy the gooey, spicy flavors of the buffalo chicken combined with the creamy cheeses.
