Tasty Buffalo Chicken Grilled Cheese Sandwich


Ingredients:
2 slices of sourdough bread
1 cup shredded cooked chicken
1/2 cup buffalo sauce
1 cup shredded cheddar cheese
1/2 cup blue cheese crumbles
2 tablespoons butter

Directions:

  1. In a medium bowl, combine the shredded cooked chicken with the buffalo sauce. Mix well until the chicken is evenly coated. Set aside.
  2. Heat a skillet over medium heat. While the skillet is warming, butter one side of each slice of sourdough bread. Make sure to spread the butter evenly for a nice golden crust.
  3. Place one slice of bread, buttered side down, onto the skillet. Layer half of the shredded cheddar cheese on top of the bread.
  4. Spoon the buffalo chicken mixture over the cheddar cheese, spreading it out evenly.
  5. Sprinkle the blue cheese crumbles over the buffalo chicken, followed by the remaining shredded cheddar cheese.
  6. Top with the second slice of sourdough bread, buttered side up.
  7. Cook the sandwich for about 3-4 minutes, or until the bottom slice is golden brown and crispy. Carefully flip the sandwich using a spatula.
  8. Cook the other side for an additional 3-4 minutes, or until it is also golden brown and the cheese has melted.
  9. Once cooked, remove the sandwich from the skillet and let it rest for a minute before slicing it in half.
  10. Serve the sandwich warm, and enjoy the gooey, spicy flavors of the buffalo chicken combined with the creamy cheeses.

Cooking Tips:

  • For extra crunch, you can add a sprinkle of garlic powder or onion powder to the butter before spreading it on the bread.
  • Pair the sandwich with celery sticks and ranch or blue cheese dressing for dipping.
  • Feel free to adjust the amount of buffalo sauce according to your spice preference.
