Ingredients:

1 can (20 oz / 565 g) crushed pineapple, undrained

2 large eggs

½ cup granulated sugar

¼ cup melted butter

1 teaspoon vanilla extract

1 cup all-purpose flour

1 teaspoon baking powder

Pinch of salt

Method (Preparation):

  1. Preheat your oven to 180°C (350°F) and lightly grease a baking dish.
  2. In a large bowl, whisk the eggs and sugar until well combined and slightly creamy.
  3. Add the melted butter and vanilla extract, mixing until smooth.
  4. Stir in the crushed pineapple with its juice.
  5. In a separate bowl, combine the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  7. Pour the batter into the prepared baking dish and spread it evenly.
  8. Bake for 35–40 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
  9. Remove from the oven and let it cool slightly before serving.
