
This soft and moist pudding-style cake is packed with crunchy nuts, rich chocolate chips, and the fresh flavor of orange zest and juice. It’s easy to make and perfect for serving with tea, coffee, or as a simple dessert any time of the day.
Ingredients
1½ cups all-purpose flour
1 teaspoon baking powder
2 eggs
½ cup sugar
½ cup milk
½ cup vegetable oil
Zest and juice of 1 orange
1 teaspoon vanilla extract
1 cup mixed almonds, walnuts, and chocolate chips
Preparation Method
- Preheat the oven to 180°C (350°F). Grease and lightly flour a baking pan.
- In a bowl, whisk the eggs and sugar until the mixture becomes light and slightly fluffy.
- Add the oil, milk, orange zest, orange juice, and vanilla extract. Mix well until combined.
- In a separate bowl, sift together the flour and baking powder.
- Gradually add the dry ingredients to the wet mixture, stirring gently until smooth.
- Fold in the almonds, walnuts, and chocolate chips evenly.
- Pour the batter into the prepared pan and spread it evenly.
- Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.
- Let the pudding cake cool slightly before removing from the pan. Serve warm or at room temperature.
