
Ingredients
2 lbs ground beef
1 tbsp minced garlic
½ cup diced onion
1 packet taco seasoning (use a low-carb version or homemade to keep it keto)
2 cans (10 oz each) Rotel with green chiles
8 oz cream cheese
½ cup chopped fresh cilantro
4 cups beef broth
Optional toppings: shredded cheese, jalapeños, sour cream, avocado, etc.
Instructions
Brown the beef:
In a skillet, cook the ground beef with onion and garlic until browned. Drain if needed.
Load the Crockpot:
Add the cooked beef to your slow cooker. Stir in taco seasoning, Rotel, cream cheese, cilantro, and beef broth.
Cook:
Low for 4 hours, or
High for 2 hours
Serve:
Ladle into bowls and top with cheese, sour cream, avocado, jalapeños—whatever you love!
