Ingredients
For the Meat Rolls
1 lb ground beef (or pork/turkey)
1 large egg
½ cup grated Parmesan
½ cup shredded mozzarella
½ tsp Italian seasoning
½ tsp garlic powder
½ tsp onion powder
Salt & pepper, to taste
For the Sauce & Toppings
1 cup sugar-free marinara
1 tbsp olive oil
½ cup sliced bell peppers (any color)
½ tsp minced garlic
4 slices fresh mozzarella
Fresh basil for garnish (optional)
Instructions
- Prepare the Meat Rolls
Combine the ground meat, egg, Parmesan, shredded mozzarella, and seasonings in a large bowl.
Mix thoroughly, then divide into 4 portions and shape into logs or small ovals.
- Brown the Meat
Heat olive oil in a skillet over medium heat.
Sear the meat rolls for 2–3 minutes per side until browned.
Remove and set aside.
- Sauté the Peppers
In the same skillet, add the garlic and sliced peppers.
Cook for 3–4 minutes, until slightly softened.
- Add Sauce & Bake
Pour the marinara sauce into the skillet, or transfer everything to a baking dish.
Nestle the browned meat rolls into the sauce.
Top each roll with 1 slice of fresh mozzarella and scatter the peppers around.
Bake uncovered at 375°F (190°C) for 20 minutes, or until the cheese melts and bubbles.
- Serve
Spoon the peppers and sauce over the meat rolls.
Garnish with basil if desired, and serve hot.
Tips
Swap the ground beef for Italian sausage to boost the flavor.
Add crushed red pepper flakes for a spicy kick.
