Caramelized Onion Tart


Have you ever craved something simple yet incredibly elegant? This Caramelized Onion Tart is the perfect balance of sweet, savory, and buttery flavors. Slowly cooked onions turn golden and jammy, layered over a crisp pastry base, and finished with creamy cheese or custard. It’s ideal as an appetizer, a light lunch, or a stunning addition to any brunch or dinner table.

Ingredients

1 sheet puff pastry or shortcrust pastry

3–4 large onions, thinly sliced

2 tablespoons olive oil or butter

1 teaspoon sugar (optional, helps caramelization)

Salt and black pepper, to taste

1 teaspoon fresh thyme (or ½ teaspoon dried)

½ cup cream or crème fraîche

1 egg

½ cup grated cheese (Gruyère, Emmental, goat cheese, or mozzarella)

Method (How to Prepare)

Caramelize the onions:
Heat olive oil or butter in a large pan over low–medium heat. Add the sliced onions and a pinch of salt. Cook slowly for 20–30 minutes, stirring occasionally, until soft, golden, and caramelized. Add sugar if using, and finish with black pepper and thyme. Set aside.

Prepare the pastry:
Preheat the oven to 180°C (350°F). Roll out the pastry and place it into a tart pan. Prick the base with a fork.

Make the filling:
In a bowl, whisk the egg with the cream. Add a little salt and pepper.

Assemble the tart:
Spread the caramelized onions evenly over the pastry base. Sprinkle the cheese on top, then pour the egg and cream mixture gently over the filling.

Bake:
Bake for 30–35 minutes, or until the tart is golden and set in the center.

Serve:
Let it cool slightly before slicing. Serve warm or at room temperature.
