Mexican Shrimp Cocktail, also known as Coctel de Camarones, is a refreshing and zesty seafood dish that’s perfect as an appetizer or light meal. It features tender cooked shrimp tossed in a tangy tomato-based sauce with fresh lime juice, crisp vegetables, creamy avocado, and a hint of heat. Bright, bold, and incredibly satisfying, this classic Mexican favorite is often served chilled with crackers or tortilla chips.
Ingredients:
1 lb (450 g) shrimp, peeled, deveined, and cooked
1 cup tomato juice or Clamato
¼ cup ketchup
2 tablespoons fresh lime juice
1 small red onion, finely chopped
1 cup cucumber, diced
1–2 tomatoes, diced
1 jalapeño, finely chopped (optional)
1 avocado, diced
2 tablespoons fresh cilantro, chopped
Salt and black pepper, to taste
Hot sauce, to taste (optional)
Method of Preparation:
If not already cooked, boil the shrimp in salted water for 2–3 minutes until pink and opaque. Drain and let cool, then cut into bite-sized pieces if large.
In a large bowl, mix the tomato juice (or Clamato), ketchup, and fresh lime juice until well combined.
Add the chopped onion, cucumber, tomatoes, jalapeño, and cilantro. Stir gently.
Fold in the cooked shrimp and season with salt, black pepper, and hot sauce to taste.
Gently add the diced avocado just before serving.
Chill for 15–30 minutes to allow the flavors to meld. Serve cold with saltine crackers or tortilla chips.
