Ingredients:
1 large egg
2 cups rolled oats
½ cup maple syrup
¾ cup all-purpose flour
¼ teaspoon baking powder
¼ teaspoon baking soda
½ cup brown sugar
½ teaspoon cinnamon
½ teaspoon maple extract
½ teaspoon salt
1 teaspoon vanilla extract
½ cup butter, softened
Method (Preparation):
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, cream the softened butter and brown sugar until light and fluffy.
Add the egg, maple syrup, and vanilla extract. Mix well until fully combined.
In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
Gradually add the dry ingredients to the wet mixture and stir until just combined.
Fold in the rolled oats and maple extract until evenly distributed.
Scoop spoonfuls of dough onto the prepared baking sheet, leaving space between each cookie.
Bake for 10–12 minutes, or until the edges are lightly golden.
