Directions:
Preheat Oven:
1.1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Make the Cookie Dough:
2.1. In a large bowl, cream together the softened butter and sugar until light and fluffy.
2.2. Beat in the egg, lemon juice, lemon zest, and vanilla extract until well combined.

Shape the Cookies:
