- 1 cup (2 sticks) unsalted butter, softened
- 1 cup brown sugar
- ½ cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 1 cup cookie butter (like Biscoff)
- 2 ½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- Optional: 1 cup white chocolate chips or chopped Biscoff cookies
Instructions
- Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
- In a large bowl, cream the butter, brown sugar, and white sugar until light and fluffy.
- Mix in the eggs, one at a time, then add vanilla and cookie butter.
- Add the flour, baking soda, baking powder, and salt. Mix until combined.
- Fold in white chocolate chips or crushed Biscoff pieces if using.
- Spread the dough evenly into the prepared baking pan.
- Bake for 22–28 minutes, or until the edges are golden brown and the center is set.
- Let cool completely before slicing into bars.
