Thai-Inspired Curry Noodle & Vegetable Soup

This Thai-inspired curry noodle soup is warm, fragrant, and full of rich flavors from coconut milk, red curry paste, and fresh vegetables. Ingredients

For the Soup

2 tbsp vegetable oil

1 medium onion, sliced

3 cloves garlic, minced

1 tbsp fresh ginger, grated

2–3 tbsp Thai red curry paste

1 tsp turmeric (optional for extra color)

1 large carrot, sliced

1 bell pepper, sliced

1 cup broccoli florets

1 cup mushrooms, sliced

4 cups vegetable or chicken broth

1 can (400 ml) coconut milk

2 tbsp soy sauce or fish sauce

1 tbsp brown sugar

Juice of 1 lime

For the Noodles & Garnish

200 g rice noodles or ramen noodles

Fresh cilantro or Thai basil

Green onions, sliced

Lime wedges

Chili flakes or sliced fresh chili (optional)

Method (Preparation)

  1. Sauté the aromatics

Heat oil in a large pot over medium heat. Add the onion and cook for 3–4 minutes until soft.
Stir in the garlic and ginger, cooking until fragrant.

  1. Add curry paste and spices

Add the red curry paste and turmeric. Stir and cook for 1–2 minutes to release the flavors.

  1. Add vegetables

Add carrots, bell pepper, mushrooms, and broccoli. Stir well to coat with the curry mixture.

  1. Pour in broth & coconut milk

Add the broth and coconut milk. Stir to combine.
Season with soy sauce (or fish sauce) and brown sugar.

  1. Simmer

Bring the soup to a gentle boil, then reduce heat and simmer for 10–12 minutes until vegetables are tender.

  1. Cook the noodles

Cook rice noodles separately according to package instructions. Drain and set aside.

  1. Finish the soup

Stir in lime juice. Taste and adjust seasoning (more curry paste, soy sauce, lime, or sugar if needed).

  1. Assemble

Place cooked noodles into bowls.
Ladle the hot curry soup over the noodles.

  1. Garnish & serve

Top with cilantro, green onions, and chili flakes.
Serve immediately with lime wedges.
