Ingredients
500 g beef stew meat (cut into small cubes)
2 tablespoons olive oil
1 large onion, chopped
3 garlic cloves, minced
3 carrots, sliced
2 potatoes, diced
2 celery stalks, sliced
1 cup green beans (fresh or frozen)
1 cup corn kernels
1 cup diced tomatoes (fresh or canned)
6 cups beef broth
1 teaspoon paprika
1 teaspoon dried thyme
1 teaspoon dried parsley
Salt and black pepper to taste
Bay leaf (optional)
Instructions (Method)
- Prepare the Beef
Heat the olive oil in a large pot over medium heat.
Add the beef cubes and cook until browned on all sides.
Season with salt and pepper.
- Add Aromatics
Add chopped onion and sauté for 3 minutes until soft.
Add garlic and cook for another 1 minute.
- Add Vegetables
Add carrots, potatoes, celery, green beans, corn, and diced tomatoes.
Stir everything together.
- Add Broth & Seasonings
Pour in the beef broth.
Add paprika, thyme, parsley, and the bay leaf (optional).
Mix well.
- Simmer the Soup
Bring the soup to a boil, then reduce heat to low.
Cover and simmer for 1 to 1½ hours, or until the beef is tender and the vegetables are cooked.
- Taste & Adjust
Remove the bay leaf.
Check seasoning and adjust salt and pepper if needed.
- Serve
Serve hot with bread, crackers, or on its own as a filling meal.
