
A simple, flavorful, and comforting Filipino-style fish steak made with tender fried fish simmered in a savory soy–calamansi sauce. Perfect for lunch or dinner and delicious with steamed rice. This recipe is easy to customize depending on the type or size of fish you use.
Ingredients
1 piece pampano fish (or any fish of your choice)
⅛ cup soy sauce
⅛ cup calamansi juice
½ cup water
1 tablespoon sugar
1 large white onion, sliced into rings
Chili powder (optional)
Cooking oil
Salt and pepper, to taste
Method of Preparation
- Prepare and Fry the Fish
Season the fish with salt and rub it well. Let it sit for 10 minutes to absorb the seasoning.
Heat oil in a pan and fry the fish until golden brown and fully cooked. Set aside.
- Prepare the Sauce
In another pan, heat a little oil. Stir-fry the onion rings for a few seconds just until slightly softened. Remove and set aside for topping.
In the same pan, sauté the chopped onions until soft and fragrant.
Add the soy sauce, calamansi juice, and pepper. Stir well.
Add the sugar, chili powder (optional), and water. Let it boil for a few minutes until the sauce reduces slightly.
- Combine
Add the fried fish into the sauce and simmer for 1 minute.
Carefully turn the fish to coat the other side in the sauce.
Top with the previously fried onion rings.
- Serve
Transfer to a serving plate and garnish with spring onions, if desired.
Serve hot and enjoy with steamed rice!
