Ingredients:
1 lb Italian sausage
1 onion, diced
1 tablespoon minced garlic
¾ cup pizza sauce
1 cup sliced black olives (optional)
1 cup mini pepperoni (optional)
6 large burrito-size tortillas
2 cups shredded mozzarella cheese
Freshly shredded Parmesan cheese (about ¼ cup per burrito)
Red pepper flakes (optional)
Oil spray, for cooking
Instructions:
- Prepare the Filling
In a large skillet, cook the Italian sausage with the diced onion until the sausage is browned and fully cooked.
Stir in the minced garlic and cook for about 1 minute until fragrant.
Add the pizza sauce and mix well.
Add any pizza toppings you like. The example includes:
1 cup sliced black olives
1 cup mini pepperoni
Mix everything together, then turn off the heat and set aside.
- Warm the Tortillas
Place all 6 tortillas in the microwave and heat for about 20 seconds until soft and pliable.
- Heat the Cooking Surface
Preheat a skillet or electric griddle to 350–375°F (175–190°C).
Lightly spray the surface with oil.
- Assemble the Burritos
Lay one tortilla flat and add about ¾ cup of the pizza filling to the center.
Sprinkle with mozzarella cheese (use the 2 cups of mozzarella divided among 6 burritos).
Fold in the sides and roll the tortilla tightly into a burrito.
- Crispy Parmesan Crust
On the hot skillet, sprinkle about ¼ cup of freshly shredded Parmesan where you will place the burrito.
Add a pinch of red pepper flakes on top of the cheese.
Place the burrito seam-side down directly on the Parmesan.
Cook for about 30 seconds until the cheese melts and sticks to the tortilla.
Flip the burrito and cook the other side until crispy and golden brown.
