Ingredients
2 cups shredded mozzarella
2 cups shredded Parmesan
2 eggs
2 tsp Italian seasoning
Pepperoni (or your favorite toppings)
Instructions
Prep:
Preheat oven to 350°F (175°C). Line a cookie sheet with parchment paper.
Make the “Crust”:
In a large bowl, mix together the mozzarella, Parmesan, eggs, and Italian seasoning until well combined.
Spread:
Press the mixture evenly across the prepared cookie sheet to form a thin, even layer.
Top:
Add pepperoni or any toppings you like.
Bake:
Bake for 25 minutes, or until the edges are golden and the cheese is bubbly.
Serve:
Slice into portions.
The entire sheet is roughly 24–25 carbs, so 1/4 of the pan makes a low-carb meal—perfect with a couple spoonfuls of pizza sauce for dipping.
