Ingredients:
For the Rice:
- 2 cups long-grain white rice
- ½ yellow onion, diced
- 2 tablespoons vegetable oil
- 8 oz can tomato sauce
- 4 cups water
- 1 tablespoon chicken bouillon powder
For the Chicken:
- 3–4 boneless, skinless chicken breasts, diced
- 1 tablespoon vegetable oil
- 1 packet fajita seasoning
For the Queso Topping:
- 2 cups prepared cheese dip (such as Gordo’s Original Queso)
Directions:
Prepare the Rice: In a large bowl, combine the long-grain white rice, diced onion, vegetable oil, tomato sauce, water, and chicken bouillon powder. Stir well to combine.
Add to Crockpot: Pour the rice mixture into the bottom of the crockpot, spreading it evenly.
Prepare the Chicken: In a separate bowl, toss the diced chicken breasts with vegetable oil and fajita seasoning until well coated. Layer the seasoned chicken over the rice mixture in the crockpot.
Cook: Cover the crockpot and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is cooked through and the rice is tender.
Add the Queso: About 15 minutes before serving, stir in the prepared cheese dip, mixing it well with the chicken and rice. Cover and let it heat through until bubbly.
