Healthy, Delicious & Energizing

Ingredients (makes about 16 squares):
1 cup rolled oats
1 cup protein powder
1 cup blueberries
1/2 cup almond milk
1/4 cup honey
1/4 cup lemon juice
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
1 tablespoon lemon zest
Nutrition (per square, 16 squares): ~130 kcal | 8g protein | 3g fat | 20g carbs
Step 1: Preheat & Prepare
Preheat oven to 350°F (175°C). Grease a square baking dish or line with parchment paper.
Step 2: Mix Dry Ingredients
In a large bowl, combine rolled oats, protein powder, baking powder, and salt.
Step 3: Combine Wet Ingredients
In another bowl, whisk together almond milk, honey, lemon juice, vanilla extract, and lemon zest. Stir in the blueberries.
Step 4: Combine & Bake
Pour the wet mixture into the dry ingredients and mix until just combined. Spread the mixture evenly in the prepared baking dish and bake for 20-25 minutes, or until the edges are golden and a toothpick comes out clean.
Step 5: Cool & Cut
Allow to cool in the baking dish for a few minutes before transferring to a wire rack. Once cooled, cut into squares and serve.

Tips for Success:
Use fresh or frozen blueberries; if using frozen, do not thaw.
Store in an airtight container in the fridge for up to a week, or freeze for longer storage.
