Ingredients
For the Lamb Shanks:
4 lamb shanks (about 3–4 lbs total)
Salt and black pepper, to taste
3 tbsp olive oil
2 large onions, chopped
6 cloves garlic, smashed
3 carrots, chopped
2 celery stalks, chopped
2 tbsp tomato paste
2 cups red wine
2 cups beef broth
1 can (14 oz) crushed tomatoes
2 bay leaves
2 sprigs fresh rosemary
3 sprigs fresh thyme
Preparation Steps
- Season and Sear the Shanks
Pat the lamb shanks dry and season generously with salt and black pepper.
Heat the olive oil in a large heavy pot or Dutch oven over medium-high heat.
Sear the lamb shanks on all sides until deeply browned (about 8–10 minutes).
Remove and set aside.
- Sauté the Vegetables
In the same pot, add the onions, carrots, and celery.
Cook for 5–7 minutes until softened.
Add the garlic and tomato paste, stirring for 1 minute until fragrant.
- Build the Sauce
Pour in the red wine, scraping up any browned bits from the bottom of the pot.
