Rich Lentil Soup


A warm, winter-friendly soup packed with vitamins and protein to boost your immunity

Ingredients

  • 2 cups yellow lentils
  • 4 tomatoes
  • 2 carrots
  • 1 onion
  • 2 potatoes
  • 4 garlic cloves
  • 1 green pepper
  • 3 cups water
  • Salt and chili powder
  • Cumin
  • 2 tablespoons butter

Preparation

– Wash the lentils, drain them, and place them in a pot.

– Chop the remaining ingredients and add them to the pot: onion, carrots, tomatoes, potatoes, pepper, and garlic.

– Add the water, cover, and let it cook over medium heat until everything is tender.

– Blend the mixture using a blender or hand blender.

– Return the soup to the heat, add the butter and seasonings (salt, chili, and cumin to taste), and keep stirring until it boils.

– Serve hot with lemon juice and toasted bread.
