Ingredients
3–4 cups shredded Italian beef (pre-cooked or leftover)
1 head iceberg lettuce, chopped
1 cup diced tomatoes
1 cup diced red onion
1 cup diced celery
1 cup diced red bell pepper
1 cup provolone or mozzarella cheese, chopped or cut into small pieces
1 cup pepperoncini peppers
1–2 cups seasoned croutons
1–2 teaspoons dried Italian herbs
Optional: olives, artichoke hearts, banana peppers
For the dressing:
½ cup olive oil
¼ cup red wine vinegar
1 teaspoon Dijon mustard
1 teaspoon Italian seasoning
1 garlic clove, minced
Salt & pepper to taste
Directions
