
Ingredients:
1 lb ground beef
1 tablespoon olive oil
1 small onion, diced
2 garlic cloves, minced
1 teaspoon paprika
1 teaspoon salt
½ teaspoon black pepper
2 cups cooked white rice
1 can (10.5 oz) cream of mushroom soup
½ cup sour cream
1 ½ cups shredded cheddar cheese (divided)
½ cup milk
1 cup frozen peas and carrots mix
Fresh parsley for garnish
Directions:
Preheat oven to 350°F (175°C). Grease a 9×13 baking dish.
Heat olive oil in a skillet. Add onion and garlic, sauté until soft.
Add ground beef, paprika, salt, and pepper. Cook until browned, drain excess grease.
Stir in cooked rice, cream of mushroom soup, sour cream, milk, peas and carrots, and 1 cup cheddar cheese. Mix well.
Spread mixture into the baking dish. Top with remaining ½ cup cheddar cheese.
Bake uncovered for 25-30 minutes, until bubbly and cheese is golden.
Garnish with fresh parsley and serve warm.
