Ingredients
For the Brownie Layer
1 cup almond flour
¼ cup cocoa powder
½ cup granulated keto sweetener (erythritol or allulose)
½ cup melted butter
2 large eggs
1 tsp vanilla extract
½ tsp baking powder
Pinch of salt
For the Keto Caramel Layer
½ cup butter
½ cup brown keto sweetener
½ cup heavy cream
1 tsp vanilla extract
Pinch of salt
For the “Snickers” Topping
½–¾ cup roasted peanuts (or chopped almonds for lower carbs)
1 cup sugar-free chocolate chips
1 tbsp coconut oil or butter
Instructions
- Make the Brownie Base
- Preheat your oven to 350°F (175°C).
- Line an 8×8 inch baking pan with parchment paper.
- In a bowl, whisk together almond flour, cocoa powder, sweetener, baking powder, and salt.
- Add melted butter, eggs, and vanilla. Mix until smooth and thick.
- Spread the batter into the baking pan.
- Bake for 15–18 minutes, or until set but still slightly soft.
- Allow to cool completely.
- Make the Keto Caramel
- In a saucepan, melt the butter over medium heat.
- Add the brown keto sweetener and stir until fully dissolved.
- Pour in the heavy cream, stirring constantly.
- Simmer for 6–8 minutes until thickened and golden.
- Stir in vanilla and salt.
- Let the caramel cool slightly, then pour over the brownie base.
- Sprinkle peanuts on top and gently press them in.
- Make the Chocolate Topping
- Melt sugar-free chocolate chips with coconut oil or butter in the microwave or over a double boiler.
- Pour the melted chocolate evenly over the caramel-peanut layer.
- Chill in the fridge for 1–2 hours until set.
- Slice & Serve
