
Ingredients (Serves 2-4):
1 lb (450 g) sirloin or ribeye steak, cut into 1-inch cubes
Salt and black pepper, to taste
2 tablespoons olive oil
2 tablespoons chipotle in adobo sauce, finely chopped
2 tablespoons honey
1 tablespoon soy sauce
2 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon lime juice
Wooden or metal skewers (if using wooden, soak in water for 30 minutes)
Instructions:
Prepare the marinade:
In a bowl, whisk together olive oil, chopped chipotle, honey, soy sauce, garlic, smoked paprika, and lime juice.
Marinate the steak:
Toss the steak cubes in the marinade until evenly coated. Cover and refrigerate for at least 30 minutes, up to 2 hours for more flavor.
Preheat the grill or broiler:
Preheat your grill to medium-high heat, or set your oven broiler on high.
Skewer the steak:
Thread the marinated steak cubes onto skewers, leaving a small space between pieces for even cooking.
Cook the skewers:
Grill or broil the skewers for 2-4 minutes per side, depending on your preferred doneness, brushing with extra marinade halfway through.
Serve:
Remove from heat and let rest for 2-3 minutes. Serve with rice, grilled vegetables, or a fresh salad.
