7UP Pound Cake with Lemon–7UP Glaze

Ingredients

For the Cake:

3 cups sugar

3 cups all-purpose flour

5 large eggs

3/4 cup 7UP

2 tablespoons lemon flavoring

3 sticks butter (softened)

Powdered sugar (about 1–2 cups, depending on thickness)

7UP (a few tablespoons, until desired consistency)

2 tablespoons milk

Lemon flavoring (to taste)

Instructions

  1. Prepare the Batter
  2. Preheat your oven to 325°F (160°C). Grease and flour a bundt pan (the one in the recipe is from Amazon).
  3. In a large mixing bowl, cream the butter and sugar together until light and fluffy. This step adds the perfect pound-cake texture.
  4. Add the eggs one at a time, mixing well after each addition.
  5. In a separate bowl, combine the flour.
  6. Alternate adding the flour and 7UP into the batter — start with flour and end with flour.
  7. Add the lemon flavoring and mix until smooth and well combined.
  8. Bake the Cake
  9. Pour the batter evenly into the prepared bundt pan.
  10. Bake at 325°F for 1 hour and 15 minutes, or until a toothpick inserted into the center comes out clean.
  11. Let the cake cool in the pan for 10–15 minutes, then turn it out onto a wire rack to cool completely.
  12. Make the Lemon–7UP Glaze
  13. In a bowl, whisk together powdered sugar, a splash of 7UP, 2 tablespoons of milk, and lemon flavoring.
  14. Adjust thickness:
    Add more powdered sugar for a thicker glaze.
    Add a bit more 7UP or milk for a thinner drizzle.
  15. Pour the glaze over the cooled cake and let it set.
