Instructions
- Prepare the Batter
- Preheat your oven to 325°F (160°C). Grease and flour a bundt pan (the one in the recipe is from Amazon).
- In a large mixing bowl, cream the butter and sugar together until light and fluffy. This step adds the perfect pound-cake texture.
- Add the eggs one at a time, mixing well after each addition.
- In a separate bowl, combine the flour.
- Alternate adding the flour and 7UP into the batter — start with flour and end with flour.
- Add the lemon flavoring and mix until smooth and well combined.
- Bake the Cake
- Pour the batter evenly into the prepared bundt pan.
- Bake at 325°F for 1 hour and 15 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10–15 minutes, then turn it out onto a wire rack to cool completely.
- Make the Lemon–7UP Glaze
- In a bowl, whisk together powdered sugar, a splash of 7UP, 2 tablespoons of milk, and lemon flavoring.
- Adjust thickness:
Add more powdered sugar for a thicker glaze.
Add a bit more 7UP or milk for a thinner drizzle. - Pour the glaze over the cooled cake and let it set.
