How To Prepare Lemon Greek Potatoes

Ingredients

• 3 lbs potatoes, peeled and cut into wedges
• 1/3 cup olive oil
• 1/3 cup fresh lemon juice
• 4 cloves garlic, minced
• 1 cup chicken broth
• 1 tsp dried oregano
• 1 tsp salt
• 1/2 tsp black pepper
• Optional: chopped parsley for garnish

Instructions

1. Preheat oven to 400°F (200°C).

2. Place the potato wedges in a large baking dish.

3. In a bowl, whisk together olive oil, lemon juice, garlic, chicken broth, oregano, salt, and pepper.

4. Pour the mixture over the potatoes and toss to coat evenly.

5. Cover the dish with foil and bake for 45 minutes.

6. Remove foil, stir the potatoes, and bake uncovered for another 30–40 minutes until golden and tender.

7. Garnish with parsley if you like, and serve warm
