Honey-Lemon Herb Chicken with Roasted Carrots & Parmesan Broccoli

Honey-Lemon Herb Chicken:

2 chicken thighs (boneless preferred)

1 tbsp olive oil

1 tbsp honey

1 tbsp lemon juice

2 slices lemon (for topping)

1 tsp garlic powder

1 tsp Italian seasoning

Salt & pepper

Roasted Carrots:

2 cups baby carrots

1 tbsp olive oil

1 tbsp honey or brown sugar

Salt & pepper

Parmesan Broccoli:

2 cups broccoli florets

1 tbsp olive oil

2 tbsp grated Parmesan

Salt & pepper

Optional: 1 tbsp breadcrumbs for extra crunch

Prepare the Chicken
Mix olive oil, honey, lemon juice, garlic powder, Italian seasoning, salt, and pepper.
Coat chicken and marinate 10 minutes.
Sear in a skillet until golden, then top with lemon slices and finish cooking (or oven-bake at 400Β°F / 200Β°C for 15–18 minutes).

Roast the Carrots
Toss baby carrots with oil, honey/brown sugar, salt, and pepper.
Roast at 400Β°F (200Β°C) for 20–25 minutes until caramelized.

Bake the Parmesan Broccoli
Toss broccoli with oil, salt, pepper, and Parmesan.
Roast 12–15 minutes until crispy.

Assemble the Plate
Add chicken with caramelized lemon slices, glossy roasted carrots, and crispy Parmesan broccoli.
