Fried Chicken Sandwich with Coleslaw

Ingredients

  • 2 chicken breasts, sliced in half
  • 1 cup buttermilk
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup flour
  • 1 cup cornstarch
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 4 burger buns
  • 1 cup shredded cabbage
  • 1 cup shredded carrots
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • 1 tablespoon olive oil
  • Pickles (optional)

Instructions

  1. Mix buttermilk with garlic powder, paprika, salt, and pepper. Add chicken and marinate for 30 minutes.
  2. In another bowl, mix flour, cornstarch, onion powder, and smoked paprika.
  3. Coat the marinated chicken in the dry mixture and let rest for 5 minutes.
  4. Heat oil in a pan and fry chicken until golden and crispy.
  5. Mix cabbage, carrots, mayonnaise, lemon juice, honey, and olive oil to make the coleslaw.
  6. Toast the burger buns lightly.
  7. Assemble by layering chicken, coleslaw, and pickles inside the buns.
